Mashed Potatoes and Gravy Recipe
I first learned to make this meal when on bed rest during a pregnancy. Not that I was cooking while on bed rest, but because a friend brought it for our family and then shared with me how it’s done.
When the boys go hunting, I can a great deal of the meat. That meat makes the perfect gravy. I also use home-canned chicken stock with bits of meat in it. But if you don’t put up food like I do, you can still make this meal with store-bought stock or even gravy in a jar.
Easy Mashed Potatoes
To make mashed potatoes the easy way, I do not peel them. Simply quarter, boil, drain, and then mix/mash them in your stand mixer. The peels get chopped up in the potatoes and add nutrients to the meal. Of course, I still add butter, milk, and salt and pepper.
To round out the meal, add something green. A bag of frozen vegetables or a tossed salad is easy enough.
- To make the perfect country gravy:
- 1 stick butter
- 2-4 tablespoons white flour
- 1-2 cups milk
- 1-2 cups broth
- Salt and pepper
Melt butter in a skillet. Whisk in the white flour and mix until smooth. Add equal amounts of milk and broth, while stirring, until you have your desired consistency. Salt and pepper to taste.
