As the mother of a large family, getting food on the table can be a challenge. I’m trying to feed a picky army without killing my food budget.
I’m sharing five of my easiest kid approved recipes that are also easy on your wallet.
1. White Beans and Ham
Ingredients:
1 pound dry white beans
1 package of diced ham (or chop a ham steak into cubes)
3 cups chicken broth
3 cups water
1 package of onion soup mix
Directions:
Combine all ingredients in slow cooker for six hours. Stir and serve with cornbread.
2. Homemade Pizzas
You can whip up a homemade pizza or two in the time it takes to call for delivery.
Ingredients:
Pasta Sauce of your Choice
Shredded mozzarella or pizza cheese
Toppings — pepperoni, mushrooms, green peppers, or even chicken
Directions:
We coat the pizza crusts with olive oil and add Italian seasoning. Spread the pasta sauce, add cheese and toppings and cook on a pizza stone according to pizza crust package directions. For a white pizza, we use Alfredo sauce and chicken – delicious!
** You can prepare extra pizzas and freeze them. All you’ll have to do is pull them out of the freezer and pop them on the pizza stone!**
3. Pigs in a Blanket
Ingredients:
1 package of Hot Dogs (we use Hebrew National)
1 can of crescent rolls
Directions:
Unroll the crescent roll dough. Wrap a piece of dough around each hot dog. (we then cut ours in half to make bite sized pigs) Bake in oven according to directions on crescent roll package. Serve with your favorite vegetable.
** If desired, you can add slices of cheese before wrapping the dogs in dough.**
4. Quesadillas
Quesadillas are one of the few meals that my children never turn down. They’re quick, easy, and easy to customize to a picky palate.
Ingredients:
Flour quesadillas
Cheese
Toppings of your choice — chicken, black beans, ground beef, mushrooms — anything you like! We top ours off with diced tomatoes and sour cream, too.
Directions:
We throw ours on the electric griddle, and they are ready in minutes.
**Tip – cut them easily with a pizza cutter.**
Combine hot dogs and cornbread? Yes, please!
Ingredients:
1 package of hot dogs
Cornbread Mix (I prefer Krusteaz)
Directions:
Prepare cornbread mix according to directions, pour into muffin tin. Slice hot dogs into small pieces, add to cornbread mixture and bake, following mix directions. Cool and serve.
Ours looked a little silly, but the kids loved them!
