Taco Chicken Pie with Avacado Salad

This is a wonderful economical recipe that we stumbled across in our meal plan with Emeals. We've made it with just one pie crust like an "open" pie as the directions say and we've also modified it to have a pie crust on top as well to make it more like a "pot" pie. Both ways are divine, and all three of the children love it too!
Ingredients
  • 1 pie crust
  • 1 package taco seasoning
  • 2- 3 bone/skinless cooked chicken breasts, chopped
  • 1 cup shredded cheddar cheese
  • 4 eggs
  • 1 cup half and half cream
  • 2 oz chopped green chilies
  • 1⁄2 c salsa
  • 1 T melted butter
  • 1⁄4 c sliced black olives
  • salsa & Ranch dressing for salad
Instructions
  1. Bake pie crust @ 400° for 7 minutes.
  2. Toss 1⁄2 taco seasoning with chicken & place in pie crust.
  3. Top with 1 cup cheese & 1⁄2c salsa.
  4. Beat eggs,other1⁄2 taco seasoning, butter, & cream.
  5. Stir in black olives & 2 oz green chilies.
  6. Pour evenly into pie crust.
  7. Bake @ 400° for 30-35 minutes.
  8. Cool for 5 minutes.
  9. Slice & serve
  10. Divide greens into individual salads & top with chopped avocado.
  11. Serve with salsa mixed with Ranch dressing.
