We’ve all been there…those days where you are on.the.go all day and all of sudden everyone is STARVING! You look at the clock and realize that it is dinner time and you’ve done nothing to prepare.
(Well, I hope we’ve all been there and it’s not just me!!)
You start rummaging through your cabinets to find something that is quick, easy and healthy. (At least reasonably healthy) It would also be a bonus if it were something that everyone would eat without complaining as well.
This is how one pot pasta started at my house. It has now become my staple for those nights when I let time get away from me.
One pot pasta is also easy to adapt to be gluten-free, just use your favorite gluten-free pasta.
I love it because while it is fast, you get some great vitamin packed veggies with the spinach and tomatoes.
To make it more filling, I sometimes add some cooked ground beef, but my family loves it simply as is.
One Pot Pasta Recipe
- 1 pound box of pasta (use gluten-free if needed)
- salt
- ½ cup butter
- ½ cup Parmesan cheese
- 1 32 ounce can of whole or diced tomatoes)
- 1 tbsp. oregano
- 1 tbsp. basil
- 2 tsp. garlic powder
- 2-3 cups of fresh spinach
- salt and pepper to taste
- (Optional 1 pound of ground beef, but technically, that would make this recipe two pot pasta)
- Cook pasta according to directions on the box and drain off water
- Melt butter over pasta
- Add the rest of the ingredients and stir well.
- Turn the heat on low until the spinach wilts (This only takes a few minutes as everything is hot)
- Salt and pepper to taste
- Serve with some extra Parmesan cheese
- Optional: While the pasta is cooking fry up the ground beef until no longer pink and add to pasta with the reset of the ingredients) Salt the beef as you cook.
A quick fix when you really just need to get dinner on the table.
And the bonus? You only have one pot to wash after dinner! (This is always a victory in my home!)
